Cucumber Benefits

Cucumbers are one of my favorite fruits (anything that produces a seed is considered a fruit) to use in my green juices. Cucumbers contain about 95% water, making them an excellent base to build your green juice. Cucumbers are a great source for many anti-oxidant nutrients such as vitamin c, manganese, flavonoid, quercertin, beta-carotene and more. These anti-oxidant nutrients increases scavenging of free radicals. Free radicals are damaging to the body; they exist within our environment via pollution, radiation, herbicides, pesticides and cigarette smoke.  Anti-oxidants play an important role in neutralizing the damaging effects of free radicals in our bodies. Cancer, aging and many diseases arise from free radical damage. Anti-oxidants are key in the prevention of cellular damage.

It is important to select organic and non-waxed cucumbers, most of the nutrients and minerals of the cucumber are found in its skin.

I drink the whole quart 🙂 You can always drink half right away and store the rest for later in the day.
